Lets mint our day with mint 🌿from our Fleur du bien herb garden kit and a delicious COCONUT FLAN AND DULCE DE LECHE WITH CARDAMOM CREAM by @noraborlasca and Martina Hardoy. Let’s start!
Ingredients:
-
8.5oz /240 grams of dulce de leche
-
3 yolks
-
2 eggs
-
8.5oz 240 grams of coconut milk
-
1 tsp vanilla essence

Sugar to caramelize (8 individual ones come out)
Cardamom Cream:
-
1 cup of cream
-
½ cup mascarpone or firm cream cheese
-
1 tbsp powdered sugar
-
1 tsp cardamom seeds ground or crushed with a mortar: remove the seeds from inside the cardamom berries
Instructions:
-
Preheat your oven to 200°C. Caramelize the molds by heating sugar in a saucepan until it melts and turns golden brown. Pour the caramel into the molds, swirling them around to coat the base. Allow to cool.
-
In a bowl, mix together the dulce de leche and egg yolks until combined. Gradually add in the eggs, one at a time, whisking well after each addition.
-
Add the coconut milk and vanilla essence to the bowl and whisk until well combined.
-
Pour the mixture into the caramel-coated molds, filling them almost to the top.
-
Place the molds in a large baking dish and fill the dish with hot water until it comes halfway up the sides of the molds. This creates a bain-marie, which will help the flans cook evenly.
-
Bake in the oven for approximately 30 minutes or until the flans are set and firm to the touch.
-
Remove the molds from the baking dish and allow to cool at room temperature. Once cooled, transfer the molds to the fridge to chill for at least 2 hours or overnight.
-
While the flans are chilling, prepare the cardamom cream by whisking together the cream, mascarpone or firm cream cheese, powdered sugar, and ground cardamom until the mixture becomes thick and creamy.
-
When ready to serve, remove the molds from the fridge and carefully run a knife around the edge of each mold to loosen the flans. Invert onto serving plates to unmold the flans.
